Since the time Ritz Carlton opened in the city, it has probably been one of the most luxurious hotels in Pune. The striking architecture throughout the lobby and the adjoining spaces, the art collection and the lavish chandeliers that welcome you are quite impressive. Three Kitchens Restaurant and Bar is the all-day diner at Ritz Carlton. It features three separate residential-style kitchens dedicated to pan-Asian, Indian and European cuisines. The result is a sprawling space perfect for a lavish buffet spread.

Keeping up with the luxury vibe of the hotel, Three Kitchens is beautifully designed and decorated. The lounge overlooks the patio and the outdoor section with natural light coming from the tall glass windows which light up the whole space. Modern art installations adorn the walls in the lounge. The namesake three kitchens have their unique style representing the cuisine. Each kitchen is fully functional with an open kitchen set-up. There are no formal food counters typical of buffets. The food served for the buffet beautifully merges with the kitchen. Each kitchen has its own unique vibe and the furniture changes and so does the wall decor. The pan-Asian section has a whole wall dedicated to beautifully crafted ceramic pots. Each artefact used in the decor has been curated and nothing seems out of place. The sprawling space can seat more than 150 people inside and an additional 80 outside.

Food:

The name Three Kitchens comes from three fully functional, residential-style kitchens dedicated to pan-Asian, Indian and European cuisines. This week with friends in tow, I experienced the midweek lunch buffet. Even on a Monday, the place was packed with diners and the kitchens were in full splendor. At the helm of affairs is an expert team of chefs headed by the director of culinary, Chef Mayyur Tiwari and the executive chef, Chef Bhushan Sawant. Together they conceptualize and design the daily menu. In addition to the three kitchens, there is a separate section for salads, mezze and cold cuts and another one for desserts. We started with the range of fresh salads and on request, the staff happily obliged to serve a mezze platter on the table. I personally could have spent my time in this section, but the other sections beckoned. From the European section, we requested grilled fish with lemon and butter sauce which the chef freshly prepared for us. The fish was beautifully cooked and the sauce was delicious. The best dish on the menu here was the tortellini which was stuffed with goat cheese, spinach and pine nuts and served with a creamy sauce with roasted bell peppers. From the pan-Asian kitchen, the dim sums were excellent. Each one on the menu was distinct and equally good. The chef’s special stir-fried lamb with cumin was probably my personal favourite from this section. The Thai red curry with sticky rice was quite enjoyable. From the Indian section, the paan patta chaat was unique and absolutely delicious. With all the excellent dishes on offer in the other two sections, the Indian section was rather neglected. But we absolutely enjoyed the freshly fried jalebis served with rabdi. A whole section dedicated to desserts designed as a patisserie is every foodie’s dream. The lavish dessert spread is put together by executive pastry chef, Chef Joginder Singh. We tried almost everything on display here and absolutely couldn’t fault a single thing.

Plus & Minus:

The best way to enjoy the Three Kitchens buffet and do justice to the efforts put together by the team is to experience it as a family or with a big group of friends. While we missed out on a few things on the menu, almost everything we tried was top-notch. The freshness and quality of ingredients were superior and it is reflected in the taste. The extravagant and lavish spread at Three Kitchens is unparalleled.
