The Wedding Biryani: Decor
The Wedding Biryani (TWB) restaurant in Anna Nagar occupies three floors, each one done up using a different theme, yet the decor thread reflects the brand. The first floor gives you the feel of eating at a wedding row table called ‘Pandhi’. On the second floor, you can eat at a restaurant-style table for ₹50 more. Terrace seating, under flowing white curtained cabanas also cost the same amount. Done up like a wedding pandal, with an Instagram-able setup to capture those special moments.
Bright, off-white walls, dark wood accents, gold fluted finish partitions, and petal shaped mirrors complete the décor. The second floor seating, placed on shiny vitrified flooring is beige and comfortable. One whole length of the restaurant’s transparent glass window overlooks the road, letting sunlight in.
TWB: Food
While food is served on banana leaves on the first floor, on the second, you get your food served to you in a banana-leaf-lined steel plate. A thinnish, traditional Mutton Bone Soup, aromatic with spices, is resplendent with flavour. Small slender strands of fat add texture. There is Muslim-style Wedding Biryani, cooked using the dum method and firewood. The mainchefs are all traditional masters who operate out of a central kitchen where the food is cooked. It is then distributed to the different outlets, where each item is finished, weighted and served hot to guests. Mutton Biryani has mutton pieces placed prominently in a bowl full of biryani rice. Each grain of rice is separate, but cooked thoroughly. The masala is prominent, but not over spicy. There is a sourness that comes from using naatuthakkali. Unlike other biryanis, the meat is not marinated. Instead, it is cooked directly along with whole spices, masala, ginger garlic paste and sliced onions. Once it is 75 per cent cooked, the soaked rice is added and the vessel is sealed. The whole process takes almost three hours to complete.
Ennai Kathrika is quite a favourite with the biryani. It adds a special something with its thick gravy, gingelly oil, peanut, sesame seed and a little khus khus paste.
Bread Halwa comes along, for bites of sweetness in between your biryani and Chicken 65.
Finally, there’s the outsourced Kulfi to look forward to.
