They say You can’t buy happiness, but you can buy pizza; and that’s kind of the same thing’. Pizza lovers will agree, for this warming carb fix with cheese and other good things is more than just food to most people. Still, popular and loved as pizza is, it’s also one of the most distorted of dishes, frequently made with pre-baked base, synthetic tomato sauce and cheese-like substance. Which is what makes the Pizza Bakery offering so special. Starting with a compact space in Indiranagar – which I enj y going to – the brand now has restaurants in Bellandur, Church Street and Whitefield and delivery kitchens in JP Nagar, Kalyan Nagar, Electronic City and New BEL Road. Also, it’s branched out further afield and is now present in Colombo.
The Classic Stuffed Garlic Bread (Rs. 278) whets your appetite for the cheese fest to follow. Sourdough bread is filled with sweet, caramelized onion and melting mozzarella and it’s simply scrumptious. There are other appetizers like Hummus & Pita with olives (Rs. 328) and Fried Chicken Strips (Rs. 308), plus pasta and a range of Mac & Cheese dishes, but the pizza is the thing here. It derives its goodness from the attention to detail and effort that goes into every step of the pizza-making process. That means choosing the right flour and turning it patiently – it’s a 48-hour fermentation – into a sourdough that is baked in hand built ovens to a Neapolitan-style base, crisp, chewy, with slightly charred edges. It’s about making the tomato sauce in-house with the best ingredients and sourcing top quality cheese. The toppings simply enhance this excellent pizza.
Top recommendations for vegetarians are the Chilli Pomodoro (Rs. 390 for 8″), with chilli peppers, olives, sun-dried tomatoes, mozzarella and feta for sharpness and Popo’s Veggie Delight (Rs. 390) with so many vegetables you could actually consider this a healthy meal and not a guilty pleasure.
My favourite is the Hellboy (Rs. 560). It’s got pepperoni, bacon and bird’s eye chilli, so what’s not to like! This meat-laden one ticks all the pizza pleasure boxes.
The Pizza Bakery has also focused on creating and offering options for vegans. I am not one, but I’m quite sure it’s better than the potato cheese and alfalfa sprout pizzas hipster cafes are serving. A range of condiments is also being produced in-house. I’ve tried the Fresh Basil Pesto and found it a great addition to the pantry. The Indiranagar restaurant has a nice selection of beers and I can’t think of a better way to complement a meal here than a mug of Geist Kamacitra.
