You wouldn’t have thought another restaurant or bar could possibly be squeezed into 12th Main, Indiranagar, but there it is, The Pizza Bakery. The ground floor is a charming black-and-white space with two wood-fired ovens blazing away and the inviting aroma of baking in the air. There’s also seating on the terrace upstairs, with its sloping roof, making for an attractive al fresco space. A massive painting of Mona Lisa sporting a beer moustache makes up one wall. Quirky and cool is what you can expect here.

I have to confess that pizza is not the first thing that comes to my mind when I’m hungry, and I can’t remember when I last ordered from a pizza chain outlet. Yet, The Pizza Bakery’s offerings are made with so much care and with such commitment to quality that I came away thoroughly impressed after my pizza dinner here. A great pizza relies on a great dough to begin with. Here, Nikhil and Abhijit Gupta, whose venture this is, go to the extent of getting their flour specially milled, with no additives or preservatives. It’s turned into a sourdough then, being allowed to ferment ever so lightly. This gives the bread a pleasant soursweetness and makes it more palatable than the more common, quick-rise pizza bases. The Pizza Bakery also eschews processed cheeses and tries to use local ingredients to the largest extent.

The Garlic Bread is listed as a chef’s recommendation among the starters and comes stuffed, half and half ,with caramelized onion and mozzarella. Crisp, salty, sweet — it was very good. My pizza topping choices were Creamy Bechamel and Truffled Funghi Misti. The former — combining bechamel sauce with pesto, potato slivers and roasted almonds — was especially delicious, an unusual mix of ingredients providing an array of pronounced flavours. The meat eaters at my table pronounced the AOP Chicken Pizza (chicken aglio olio, bocconcini, caramelized onion, jalapeno, roasted peppers and mozzarella) excellent and also gave the thumbs-up to the Lamb & Chick, which is topped with a juicy lamb ragu, chicken sausage and parmesan, besides mozzarella.

You can have your pizza ‘finished’ with an egg, sunny side up, a ball of burrata or have it flambed with dark rum at your table. These are 11-inch pizzas with thin centres and sturdy crusts, slightly charred, smoky and with generous toppings. One pizza will easily suffice for two. The Pizza Bakery will start serving beer by the end of this month. To drink there’s also Sparkling Natural Fruit Juice, without added sugar, and a very nice Oreo Shake. I followed up my pizza with a delightful Key Lime Tart. Chef Abhijit Saha is a consultant for this pizzeria, paying special attention to the desserts, and his signature style is evident in many aspects of the menu.
