Sante Spa Cuisine, Nungambakkam, Chennai: Decor
In the midst of Chennai’s high-end fashion and food hub, Sante Spa Cuisine shares its address with a jewellery store. I walk into the cool white walled interiors of the hotel, with white painted wood and cane furniture.
Splashes of green greet the eye – reflections of the plants thriving outside the arched windows are brought indoors in some of the furniture, along with potted plants peppering the place.
As I settle in, I notice the open kitchen. Lots of activity there. I also notice the smooth sophistication of wooden crockery against the white of the table, and pour some water into the copper glass for myself, feeling healthy already.
I think it is the charm of green and white that makes me enjoy the Pineapple Spinach, Spearmint Black Pepper (Yes, that is what it is called) so much. It is served in a mug with no sugar added. This you simply must know: I’m sipping my drink through a green straw, made of a rolled-up banana leaf!

The Creamed Asparagus, served in a mug, is again green, but with a difference. It comes along with a toasted (homemade), crunchy bread with seeds sprinkled on the crust, topped with smoked tomato chutney. I opt for the bread, because I like crunch and I like tang and more than anything, I like that none of it is greasy, too.
I simply love Sante’s Multigrain Khakhra that comes along with beetroot and spinach hummus. Smooth, almost buttery, both the hummus go well with the khakhra, but for me, the beetroot has an edge over the spinach, because it’s pleasant, fleeting hints of garlic come as an aftertaste.
Although there is Salted Caramel Mud Cake, my vote goes to the Almond and Muesli Ice Cream. Generously sprinkled with nut shavings and infused with saffron, this one is sweetened just right. I love its lightness, and the bite from the toasted nuts.
Note: Sante means good health in French, the food here is meant to be a spa treatment for your body.
Plus & Minus:
A Pune franchise, the space itself is lovely. Ambika Chowgule is a hands-on restaurateur. Although she is new to the business of food, she makes sure she is there during lunch and dinner.
But (and there’s almost always a ‘but’) if you have a chauffeur-driven car and you want to dine at Sante, let me tell you this: the driver is going to complain, as there is hardly any street parking available.
