ly safe by going as near to opening time as possible. Most diners tend to stroll in by 2pm or later, and then, at least during these strange times, have lunch or an early (for Delhi standards!) dinner. All the staff – kitchen and service – at the brand new KLAP have been vaccinated twice and wear gloves, masks and face shields. And still manage to provide top-class service through it all. There are two floors: the first and second. And though there is no lift (this is Khan Market, after all) I prefer the brightly lit second floor that overlooks an open terrace. Even the first floor is full of natural light, the seats are comfortable and the mood is international without a whit of pretentiousness.

Klap, Khan Market, New Delhi: Food

I have not yet tried the Coastal part of the menu, but chef Gurmehar Sethi’s facility with Thai tastes is well-known (his other restaurant is Ziu). Such is his talent that he manages to infuse a spark of Thailand into something as desi as shakarkandi chaat (₹445) that is a combination of sweet potato cut into a lotus-like shape, air-fried with various titbits and served with a tangy chutney. Part bar snack, part shared starter, while decoding the menu, it is the perfect taste of things to come: the whole is far greater – and grander – than the sum of its parts. Prawn crème cheese, bamboo shoots, activated charcoal (₹545) turned out to be a plate of dimsum, where the wrappers were made with activated charcoal and flour. It has probably been invented in this kitchen and looks striking, served as it is on a leaf with a tangy fruit dip. Spicy tuna oishi (₹995) is a great choice for sushi aficionados: the tuna is minced and topped with a tiny square of gold leaf, a slice of green chilli and one of garlic. Each sushi is surprisingly large and if you pop the whole thing in your mouth at one go, the conversation stops for a while. On the other hand, you break a cardinal rule of eating sushi if you eat it in two bites!

My Norwegian teriyaki salmon (₹1,295) was too filling to warrant any starters or small plates before it.
