Flying Elephant: Park Hyatt, Guindy, Chennai: Decor
Newly renovated, The Flying Elephant has changed, yet retains its unmistakable personality. Small touches that make the restaurant memorable. For example the huge curved glass frontage overlooking the hotel’s signature lotus pond. Or the beige lampshades in front of brown blinds.
No white plates here. The menu, too, is quite different in its presentation with Chef’s signature illustrations adding to the novelty.
Food:
First to arrive at the table are Chef’s classic breads – saffron, multigrain with rosemary and thyme. Olive oil with balsamic reduction accompanies the breads to munch on as you wait for your Whipped Burrata assembly station at your tableside. You can actually watch the process before the creamy burrata tops slices of bruschetta along with hazelnuts, olives, cherry tomatoes, balsamic caviar and basil. Quite interesting, the Salmon Paani Poori is also assembled at the table. Each crisp, puffed poori is filled with a masala of pink Norwegian salmon, raw mango and cucumber. Cambodian Fish &Amok – among Cambodia’s national dishes, is steamed in a banana leaf. The ingredients are hand-pounded, and added to the fish, which is then steamed to a mousse-like consistency. Served with steamed fragrant jasmine rice, this dish has palate appeal especially for those who love fish and coconut flavours in their food.
The pizza oven is raging and ready for your hand-stretched and customized pizzas.
Finally, there’s a rather complex dessert with a simple name – Apple Crumble Brulee Tart. An oval-shaped buttery pastry surrounds the familiar cinnamon-y steamed apple. Topped with pastry crumble and nuts, the dessert gets flambeed right at your table. Pluses and minuses: The newly renovated restauranthas maintained its signature décor elements. The lift is gone, so you’d have to climb up a few levels in case you want a table with a higher view of the lotus pond.
