Baba’s, a well-recognized food brand of Punjab today, started as a nameless entity near the Ludhiana railway station in 1962. Manned by one Himmat Singh–affectionately anointed Baba in deference to his demeanour–it came to be known for its tandoori fish,tandoori chicken, and mutton seekh kebabs. Some twenty-five years down the line, the son, Kanwaljit Singh, introduced his wife’s version of a popular restaurant dish to their repertoire. One that is now synonymous with the brand: Butter Chicken. Another generational leap found Asian and European preparations added to a predominantly North Indian and Mughlai menu, offering both vegetarian and non-vegetarian dishes.

Having earlier relished the odd meal at Baba’s Ludhiana, they’d been on the must-try list ever since they breezed into Chandigarh less than a year ago. I finally got down to it last month; ordering in, more than once at that, in quick succession. This one time, for a family gathering, it was Tandoori Broccoli, Tawa Mutton Tikka, Lemon Chicken White Gravy, and Rara Chicken. Another time, it was Tandoori Chicken, to celebrate the nip in the air, while the Classic Butter Chicken added oomph to a somewhat unexciting meal recently.

Plus & Minus:

The packaging remains oldschool with the food boxed in branded squares, neatly wrapped in foil or in plastic bags. They were prompt on delivery, and maintained a level of consistency each time: quality ingredients, more than adequate quantity, and a restrained use of spices. Other than the broccoli, which had lost its crunch, the non-vegetarian dishes were all outstanding, especially the mutton tikkas and lemon chicken. The rara chicken,equally well-made, was missing its promised fieriness though and could have done with more keema in the gravy. Their subtly-marinated tandoori chicken–sans food coloring and overwhelming masalas–is the real deal in my opinion. As for the butter chicken, it was tasty enough but Ludhiana does it better. No doubt, however, that Baba’s is a delectable value addition to the North Indian food scene in the Tricity.
