Dropped in at this pizzeria, long on the radar, for a quick bite between shop-hopping with a buddy. I’d been hearing good things and finally got around to saying hola! a couple of weeks ago. As I understand it, Rojo Tomate earlier operated out of a truck in Panchkula but had to down shutter within the year. A couple of devoted regulars would have none of it; they went on to partner with the pizzaiolo and relocated his obvious comfort with a wood-fired oven to Chandigarh. Alongside a sizable number of pizzas, the menu lists an array of garlic breads and pastas, an odd soup, a handful of salads and desserts. They offer both vegetarian and non-vegetarian options.

We decided to try the Caprese Salad (fresh mozzarella, cherry tomatoes tossed in Genoese pesto and drizzled with balsamic reduction) over fresh lime sodas while waiting for our half-and-half pizza to be readied. One part Spanish Flame with prosciutto, sundried tomatoes, and capers, and one part Famous No.7 with green olives, red peppers, and mushrooms. On being joined by another friend, we ordered ourselves a Fettucini con pollo E’Funghi too–creamy pasta with pan-seared chicken, mushrooms and parsley. For dessert, we picked the Lava di Volcano.

Plus & Minus:

The salad didn’t quite make the cut as a first impression of Rojo Tomate. It turned out to be a small portion wholly overwhelmed by basil pesto. The pizza, on the other hand, was marvelous. The crust–thin at the base with an airy, puffed edge–was baked to a fine char, and topped with quality ingredients. Every mouthful textured and flavorsome, be it the ham or olives and peppers. The pasta was well-made and adequately apportioned, the mushrooms and cream according it a delicious earthiness, offsetting the juicy freshness of the pizza toppings. Our dessert, a warm gooey cake with a molten chocolate centre, was just as delectable. I see myself going back for more of their pizzas in the near future. See you there?
