Biryani in India has evolved over the years and different parts of the country make their version of biryani. It is also one of the most ordered and delivered foods in the country. Pune has many noteworthy biryani restaurants and the addition of Biryani by Kilo to this list was graciously welcomed by Punekars. Known for made-to-order, dum-cooked biryani, Biryani by Kilo is one of the fastest-growing biryani delivery chains in the country. They have more than 55 outlets in India and 4 in Pune – Baner, Kharadi, Wanowrie and Wakad. After a lot of recommendations from a friend who kept raving about the biryanis, I ordered from their Baner outlet. I got their signature Hyderabadi dum biryani along with their newly added appetizers and of course desserts.

They take 90 mins to deliver the food as the biryani is made-toorder. While ordering, the delivery time was clearly mentioned and the food was delivered on time. The packaging was impressive and the food was packed impeccably without any spillage. Almost everything else was packed in eco-friendly packaging. The biryanis came in earthen pots properly sealed with dough. The handis came with an angeethi (an additional earthen bowl with a candle) to keep the biryani warm. According to their website, they source these handmade handis from potters from the kumhar gram (potters village) near Delhi. The desserts were packed in the clay pots too and appetizers in paper containers.

The half kg variants of the Hyderabadi chicken and mutton dum biryani has 3-4 large pieces of meat. While I love my mutton dearly, the chicken biryani was easily my top pick here. The biryani was flavorsome and the chicken was succulent, tender and perfectly cooked. The masala to rice ratio was perfect and the spice level was just right. The biryani came with a portion of salan (gravy) which was not needed. I had asked for a portion of Burhani raita which was perfect with the biryani. The mutton biryani was equally delicious, but the mutton was cooked unevenly. I had ordered a veg biryani too and to my surprise, it was really tasty. The biryani was generously layered with beans, carrots, potatoes, and cauliflower cooked well and topped with fried onion. Among appetizers, the veg galouti kebabs were a tad disappointing. The texture and consistency were spot-on, but it completely lacked seasoning. The chicken ghee roast on the other hand was absolutely cracking. The boneless chicken chunks were cooked in a delightfully fiery and tangy masala roasted in ghee. We ate the ghee roast with a roomali roti which helped with managing the heat. The first thing I had noticed on the menu, even before the biryanis, was the matka phirni. It was delivered in a clay pot topped with kesar. The pot had absorbed some of the liquid in the phirni which made it more rich and creamy. It was the right sweet dish to balance the spice and heat from the ghee roast and biryani.

Plus & Minus:

I was impressed by the food and particularly the packaging. The Hyderabadi chicken dum biryani is highly recommended. I will be definitely ordering again, to specifically try the Kolkata biryanis and their kormas and curries.
