LYFE by Soul Garden Bistro is more than a restaurant. It is a lifestyle. While it serves chemical-free food, it is also about sustainability. Dedicated to a zero-waste lifestyle, Jignesh Pujara, who owns the restaurant, recently launched EKO LYFE in the same space, to make available organically grown rice, cheeses, honey and milk, among other things. The very same ingredients the restaurant uses in its food.

Long and narrow, the restaurant section has comfortable seating, and quite a pleasant vibe. I like the colorful cushions and the food images on the walls. One side of the restaurant has cosy two-seater tables for those intimate conversations over a cup of Hot Chocolate (which is on the amazing side and comes frothy, thick and in an earthy mug). One counter shows you the elements that go into your salad, while another has tempting gelatos. If you’d like a taste before the indulgence, there are tiny cones you can try them in.

A look at the menu tells me that the restaurant lists the products they don’t use in their food.And it tells you how many calories you’re about to consume. My choice is the Lyte Bowl of Mexican Salad — 245 calories. I don’t eat all of it, even though I like the hydroponically grown kale, avocado, sweet potato and black-eyed peas in a lemon cilantro dressing. I try the Falafel Pita Wrap next. I like how the Pita Wrap is served — with a choice of dips — silky hummus, cucumber, tzatziki, labneh and muhammara.The wrap itself, made using durum wheat, holds together the falafel, lettuce and sour gherkins. I love the chips that come along on the side, too, and try them with the different dips just so I know how they taste. I like the citrus sourness, crunch of raw onions, cherry tomatoes on ciabatta bread of the Avocado on Toast. Lately, this joint has introduced mock meats in different forms — biryani, burgers, etc. My favourite has to be the Vegan Chicken Butter Masala with the softest phulkas. This one is buttery without butter and creamy without cream. Instead, they use cashew paste, and the ‘chicken’ chunks are quite juicy. I try the Paal Gelato in a proper cone. They use only A2 milk and sweeten their gelatos with organic, unrefined khandsari sugar.

LYFE has reinvented itself to suit the times. Its on-premises store is a stroke of genius as it is an attempt to help guests lead a sustainable life while eating right.
