12 It feels good to know that the person who conceptualized the brand, bringing it to life, one outlet at a time, is completely hands on. Minakshi is not afraid to get her clothes splattered with food as her passion for doing the ‘right’ thing rules all else. Take, for example, her strawberries. They arrive straight from Mahabaleshwar and are flash frozen the day they are picked. The freshly blended strawberry smoothie stands witness. Slightly brownish-pink, it is delicious and has no added sugar. Those strawberry seeds that crunch in the mouth bear witness.The sweetness comes from the vanilla ice cream with its distinct, mellow flavor. The new hero at the ECR cafe is the Sunday roast lunch. You would need to book it a day in advance, and believe me, it is large enough for a small family with medium appetite. Slow roasted for at least six hours, the whole, evenly browned chicken’s journey to your table begins as soon as Minakshi opens her oven door. Delicious aroma wafts in the air. The closer it gets, the better it smells. A complete meal, it is stuffed with rice, citrus, and bits of chicken liver. Holding a salad, boiled vegetables and a pinkish gravy, the platter is served with crusty, muffin-shaped Yorkshire pudding. Don’t get fooled by that ‘pudding’ tag. The puds are bland by themselves, and they need to be dipped in that thick-ish, pink-ish gravy made using flour and chicken stock, to instantly lift them to their true personality.
Mash up the boiled veggies and add some gravy. Again, new tastes, new flavors.
End your meal with her famous waffles. They possess the softness of kindergarten on the inside surrounded by a protective crispness of maturity on the outside. Topped with whipped cream and straw berries, these are good.
