Utterly delicious brownies, cakes and desserts at a popular patisserie THEOBROMA

Remember all the excitement when Theobroma arrived in Bengaluru? I’m happy to report that the hype is entirely deserved. What’s more, you no longer have to entertain requests to bring back boxes of brownies whenever you make a trip to Mumbai. The brand had a mega launch in Bengaluru; six outlets were set up on high streets and occupied prime real estate. In my experience I’ve observed that such scaling and growth often comes at the cost of compromised quality. But Theobroma has kept the focus on food and I can only guess at the planning and investment in the back-end that makes this possible.

I went to the outlet in Koramangala –a brightly lit cafe, done up in the signature pastel blue of the brand and candy pink. It made me think of the tea parties of my childhood. The staff is welcoming and well-informed, making it a pleasure to shop for goodies here. I have a weakness for a good egg-mayo sandwich. It’s such a simple thing, yet few cafes get it right. Done well, this sandwich is a thing of joy. Theobroma’s hit the spot for me. The bread was fresh and soft, the egg boiled right and the mayo, light and creamy, with none of the nastiness of the commercial ones, held everything together beautifully.

I ordered a square of the Fresh Cream Pineapple Pastry (₹135). It was moist,not too sweet and the cream was really fresh cream, not the ‘nature identical’ synthetic product that puts me off cakes and gateaux at most places, including five-star buffets. This was a gorgeous piece of confection, bringing back memories of cake and cream eaten when the art of baking wasn’t the complication it now is, all about Instagram-ability, yielding little joy.

I bought Walnut Brownies (₹85 each) to take home. They kept well and were delicious with my morning coffee the next day. Theobroma’s Wheat Sour Dough Loaf (₹85) does the job perfectly well. It comes sliced which is a great convenience. I toasted up slices,slathered them with goat cheese and strawberry preserve and had myself another delicious dessert. I bought for my friend Theos Mava Cake (₹285) and she proclaimed it‘wonderful, fresh and not too sweet. ’ I’m so glad this patisserie, though modernized and now a scalable business, still has at its core the goodness and tradition of old-fashioned baking.
